LARA BAR - Coconut Lime

  • 1 cup cashews
  • 1 1/2 cups pitted semi-soft dates
  • 1/4 teaspoon salt
  • 1 tablespoons lime juice
  • 1 cup dried shredded coconut


1. Measure out all your ingredients.

2. In the food processor, pulse the cashews until it turns to bite size pieces. Empty cashews into a big bowl.

3. Pulse Dates until there are no chunks left. This will take longer than the cashews but still under 2 minutes. Empty Dates into the same bowl with the cashews.

4. Line a baking pan with parchment paper or plastic wrap, long enough to hang over the edges. Lay a sheet of parchment paper each both directions. This will prevent sticking and be super easy to pull out.

5. With your hand mix together all the ingredients until everything have been incorporated.

6. Press into baking pan.

4. Chill for at least a couple of hours until firm, then cut into squares or bars.
